I have spent many hours on Pinterest drooling over all of the delicious recipes and photos of food that can be found on the site, and overnight oatmeal is something that I’ve looked at and come back to too many times to count. Well, I finally decided to stop staring at pictures and actually make something, and it was a hit with the whole family!
On Tuesday night I surprised everyone, including myself, by having dinner ready when Kyle and A got home from work and daycare. Normally I’m still knee deep in laundry or staring at the fridge trying to decide what to make for dinner when everyone gets home, but not on Tuesday. Every once in a while I have a productive day. We finished dinner early and decided to keep the productivity streak going and prepare a fun breakfast for the next morning. We happened to have the ingredients we needed for cookie dough overnight oatmeal, so like any good west coast gal worth her weight in hemp seed and quinoa, I went downstairs, where I have a plethora of mason jars that used to contain home-made jam, (obviously before kids). I grabbed four and 10 minutes later breakfast was setting in the fridge for the next morning!
4 Tbsp of peanut butter
3 Tbsp of brown sugar
1 cup of Greek yogurt + 2 Tbsp
2 cups of almond milk
1 Tbsp of chocolate chips
2 cups of quick oats
1 tsp of cinnamon
1 tsp of vanilla extract
In one bowl combine peanut butter, brown sugar, 2 Tbsp Greek yogurt and chocolate chips. This makes your cookie dough
In another bowl combine almond milk, oats, cinnamon and vanilla.
Divide cookie dough between four mason jars and add a layer of Greek yogurt to each.
Add the oat mixture to each jar and place in the fridge overnight for a super easy and yummy breakfast the next morning!
A loves to help out in the kitchen and because she is a picky eater we try to get her involved as much as possible with the hope that she will be more interested in eating something she helped make. This was the perfect recipe for her to lend a hand (or tongue :-P)
If you’re looking for an easy and fun breakfast, overnight oats are perfect! Seriously, I’d eat this stuff every morning and I think A would too!
