Well I have good news and bad news.
The good news is that at 8 months G seems to have grown out of her milk protein allergy and is now cleared to eat dairy. Even more exciting, I’m also cleared to eat dairy. Oh cheese and chocolate, how I’ve missed you. I never stopped thinking about you. I’m pretty pleased with the timing right before Halloween! Just in time to be able to steal from A’s bucket of treats!
The bad news is that while G is doing great with dairy, she seems to have developed a sensitivity to eggs. The first time I gave her scrambled eggs (my go-to lazy dinner) there was no reaction and I figured eggs were safe. Unfortunately, after both her second and third time eating scrambled eggs, she tossed her cookies all over her crib. My mission now is to test her tolerance and see where the line is. The first recipe I tried with egg baked into it was the applesauce muffins that my mom makes for my nephews every time she sees them.
Here is the recipe:
- 2 cups rolled/old-fashioned oats
- 2 cups unsweetened applesauce
- 1 cup milk
- 2 large eggs
- 2 teaspoons vanilla
- 4 tablespoons of melted coconut oil
- 1/2 cup of maple syrup
- 1 1/2 cups whole wheat flour
- 2 teaspoon baking powder
- 1 teaspoon baking soda
- 2 teaspoon cinnamon
- optional topping of milk chocolate chips or cinnamon and sugar
The baby’s muffins were plain and I chose to top the larger muffins for the rest of the family with milk chocolate chips.
Preheat oven to 375 degrees
Combine rolled oats with the wet ingredients in one medium bowl
In a large bowl combine the dry ingredients. Once mixed add the wet ingredients and fold together until completely combined.
Spoon into greased muffin tins and bake for 15-20 minutes.
This recipe should make 12 regular size muffins and 12 mini muffins
These muffins were a hit with the whole family and G didn’t have any issues with the egg that was baked into them.
Like the milk protein allergy, egg allergies are common in kids and they often grow out of them. I’m hoping this is the case for G! We eat a lot of eggs in this house!
